Boozy Brownies

Ingredients:
3 oz ( ½ cup) Guitard 60% bittersweet dark chocolate (is preferred but you can use any type of chocolate you like or even blend bittersweet with milk chocolate as an option)
¾ cup sugar (you can use sugar substitute, Monk fruit)
½ cup unsalted butter
¼ cup (50ml) Everclear
2 large organic eggs
1 cup all purpose flour

Directions:
1.Melt butter and Chocolate in a double boiler (* you can microwave, melt for 25 sec, whisk and repeat until melted smooth chocolate butter mixture) 
2.Add sugar to the mixture and whisk well
3.Add the Everclear  & mix well checking  to make sure the mixture is blended and cool
4.Add two eggs to the cooled down mixture ( make sure the mixture is cool so not to cook the eggs
5. Add the flour into the mixture and mix well. Make sure the mixture is uniform.
6. Transfer the batter to a greased pan and bake at 350 degrees. Bake for about 25 min or until a fork inserted comes out almost clean. We want it to be a bit moist and gooey unlike a cake.
7. Cool on a wired rack for about 15 min.
8. Cut into bars.


Secret tip...once the batter is ready i like to add ½ cup of chocolate chips for an added gooeyness.
