Fresh Farro Salad
Ingredients:
1 1/2 Cups Farro
1 Head of Fennel
1/2 Red Onion
1 Tbsp Olive Oil
Halved Cherry Tomatoes
1/2 Cup Olive Oil
1/2 Cup of Sherry Vinegar
Directions:
1. Boil salted water in a pot
2. Add Farro & cook until Al Dente (6-10 minutes)
3. Strain faro & let it cool down to room temperature
4. Julienne Fennel & slice red onion
5. Add fennel, red onion and 1tbsp of olive oil to pan & caramelize over stove top. Afterward remove and cool to room temperature
6. Add onion and fennel and halved cherry tomatoes
7. Dress with Olive oil and Vinegar & add salt and pepper to taste
8. Top with fresh basil and parmesan
