Ingredients

For the Duck
  • 2 Duck Breasts
  • 1/2 cup Anise Rub*
  • 2 cups Broccoli Florets, blanched
  • 1 cup Snow Peas, blanched
  • 1/2 cup Red Bell Pepper, medium dice
  • 2 tbsp Canola Oil
  • 3 tbsp Lite Soy Sauce
  • 4 tbsp Balsamic Orange Syrup*
  • 20 Orange Segments
  • 1 cup Fried Rice Noodles
Anise Rub
  • 3 tbsp Ground Anise Seed
  • 1 tbsp Ground Fennel Seed
  • 1 tbsp Ground Coriander Seed
  • 1 tbsp Ground Pink Peppercorns
  • 2 tbsp Kosher Salt
  • 2 tbsp Brown Sugar
  • 2 tbsp White Sugar
Balsamic Orange Syrup
  • 2 cups Balsamic Vinegar
  • 1 cup Orange Juice

Instructions

For the Duck
  1. Score the skin of the duck breasts with a knife.
  2. Dust the duck breasts with the anise rub, ensuring an even coating. Allow them to sit for about hour.
  3. Heat 1 tbsp of oil in a hot sauté pan. Place the duck breasts skin-side down and let them brown. Flip the duck breasts over and transfer the pan to an oven preheated to 350°F (175°C) for approximately 10 minutes.
For the Vegetables
  1. Heat 1 tbsp of oil in a wok. Add garlic and lightly fry it.
  2. Toss in the blanched broccoli florets, snow peas, and diced red bell pepper. Sauté the vegetables until they are tender.
  3. Deglaze the vegetables with lite soy sauce and then place them in the center of each serving plate.
Assembling the Dish
  1. Arrange 5 orange segments around the perimeter of each plate.
  2. Drizzle the balsamic orange syrup over the vegetables.
  3. Slice the cooked duck and place it on top of the vegetables.
  4. Garnish the dish with fried rice noodles.
Anise Rub
  1. Mix all the rub ingredients in a bowl until well combined. Set aside for use.
Balsamic Orange Syrup
  1. In a saucepot, combine balsamic vinegar and orange juice.
  2. Reduce the mixture over medium heat until it reaches a thickened and syrupy consistency.
