Barbecued Chicken Salad
Ingredients
For Chicken
- 1 Barbecued Chicken, meat pulled from bone, skinned, and cubed
- Eritrean Berbere Rub

- 2 cups Ground Red Chili Pepper
- 5 tbsp Garlic Powder
- 2 tbsp Onion Powder
- 2 tbsp Ground Ginger
- 1 tbsp Ground Cloves
- 2 tbsp Kosher Salt
- 2 tbsp Ground Cumin
- 2 tsp Ground Cinnamon
- 1 ½ tsp Ground Cardamom
- 1 tsp Ground Black Pepper
Barbecue Chicken Dressing
- 1/3 cup Bar-B-Q sauce (preferably Kansas City style/smoky sauce)
- 1/3 cup Mayonnaise
- 1 can Chipotle Chili in Adobo Sauce
Mix for Salad
- 1 small Red Onion, diced
- 1 large Red Bell Pepper, diced
- 1/2 cup Cilantro, chopped
Instructions
Eritrean Berbere Rub
- Combine all the rub ingredients to create the Eritrean Berbere Rub. Thoroughly mix the spices. This mixture yields about 3 cups. Store the rub in an airtight container for up to three months.
