Grilled Peach & Blackberry Summer Salad
Ingredients:
7 cups chopped greens - fraise or butter or your favorite mix, basil is a good option too
3 slices bacon cooked just before crispy
3 slices bacon cooked crisp
3 medium peaches pealed and sliced
1 jalapeño sliced and cleaned (optional)
1 Tablespoon brown sugar
1/2 cup blackberries
1/2 cup crumbled goat cheese
1/2 cup chopped walnuts- boozy nuts
Honey Balsamic Vinaigrette
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard- optional
1 tablespoon honey
1/8 teaspoon flake salt
1/8 teaspoon pepper corns
Directions:
Cook bacon at both stages. Use the grill used for the bacon to grill the peaches & peppers. Before placing the peaches on the grill add the sugar to the bacon skillet, once melted add peach flesh side down and peppers grill for approx. for 1 minute each side. Place greens on the on the plate then add. Peaches, blackberries, cheese, bacon and all ingredients on top of the mixed green plate. Place the Jalapeño on the side of the green mix. In a small bowl mix together Honey Balsamic vinaigrette ingredients once combined drizzle over salad and top with boozy nuts!
