Blackberry & Brie Galette

Ingredients:
2 cups fresh Blackberries
3 tablespoon course sugar or 1 table spoon honey
Lemon Zest
Brie Cheese
Puff Pastry

Directions:
Mix 2 cups fresh Blackberries with 3 tablespoon course sugar or 1 table spoon honey and lemon zest (You can freeze this mixture up to 3 months)

Roll out puff pastry dough at room temperature or slightly cooler.

Cut slices of fresh Brie in the middle of the puff pastry add the Blackberries on and around the Brie - drizzle with a small amount of honey.

Roll the pastry dough around the cheese and fruit( like a rope) pitching the dough around the fruit.

Bake at 375 degrees 20-25 minutes checking for a golden brown crust. Top with fresh lavender sprigs or fresh mint!
