Monterey Crabcake
Yield 4-6
Ingredients
- 1 Lb Dungeness Crab Meat, cleaned
- 2 Each Celery Ribs, washed and finely diced
- 3 Each Green Onions, cleaned and minced
- 2 Eggs
- 1/2 Cup Mayonnaise
- 1/2 Stick of Butter
- 3 Dashes of Tobasco
- 3 Tbsp Fresh Parsley, chopped
- 1/2 Red Onion, finely chopped
- 1 Cup Bread Crumbs
- 1 Tspn Old Bay Seasoning.
Instructions
- Combine all ingredients except bread crumbs; lightly mix until they stick together. Form cakes into desired size, and coat with bread crumbs. Melt butter in pan over medium heat, and fry cakes on both sides until lightly browned.
