Hawaiian Sweet Bread French Toast with Caramelized Bananas and Vanilla Vodka Coconut Syrup

Ingredients

  • 4 Each Hawaiian Sweet Bread slices, sliced 1/2” thick
  • 1 Oz Granulated Sugar
  • 2 Each Bananas, sliced
  • 1/2 Can of Coco Loco Mix
  • 1/2 Can of Coconut Milk
  • 2 Oz VOX® Vodka
  • 1 Oz Butter
  • 2 Each Eggs
  • 1 Tspn Vanilla Extract
  • 1/2 Cup Milk
  • 2 Oz Macadamia Nuts, chopped and toasted

Instructions

  1. In a frying pan, heat sugar until amber in color. Add bananas. Cook for 2 minutes, until soft and coated with caramelized sugar. Set aside, keeping warm. In pan, combine Coco Loco mix and coconut milk until reduced by ½ and syrupy in consistency. Add vodka. Set aside, keeping warm. In bowl, beat eggs, vanilla and milk. Dip bread in egg batter and sauté in butter in frying pan, until golden brown on both sides. Place 2 slices of bread on plate, top with bananas, vodka-coconut syrup and macadamia nuts. Repeat.
