Easy Wild Caught Salmon using Everclear Grain Alcohol

We all know that wild caught salmon in our diet helps us put a check mark in so many of the healthy boxes and while salmon is easy to cook, it can often go dry, with little effort.

This recipe, and it’s secret ingredient, I believe, will eliminate that “dry” obstacle and elevate your salmon flavor profile. Easy peasy! So what’s the secret? Everclear Grain Alcohol. The premium high proof grain alcohol.. surprised? We were too! Everclear Grain Alcohol is used for extracting flavor from other ingredients. Many do not know that it is Odorless, flavorless and colorless, which makes this a perfect ingredient to boost flavor! So remember, whatever ingredients you are cooking with, adding Everclear Grain Alcohol will only enhance the flavor.

This recipe is quick and easy. Including preparing and cooking, your timeline is approximately 20-25 minutes from start and finish. When all is said and done, it’s a short amount of time for a fresh salmon dish oozing with flavor. The recipe is pretty straight forward. If you have an insta-oven this recipe is perfect as is your traditional oven. The recipe calls for basic salt and pepper but don’t limit yourself, have some fun playing with color and flavor!

A FEW TIPS TO PASS ON:
While this salmon recipe calls for clementines, you can easily substitute any citrus: Both ruby red grapefruit and blood orange are amazing substitutes in both color and flavor. Also worth noting: A good old valencia orange work wonders as well.  I used a beautiful grey salt and fresh red pepper corn.

Also, try cutting your citrus slices so they match in thickness to make sure it’s cooked evenly. With that said,  if a few are thicker or thinner, smaller or larger it also gives the dish a nice variance in look and taste. It’s also fun to save some citrus to use as a garnish and as a fresh squeeze of flavor once complete.  Using the Everclear Grain Alcohol in the sauce, both during and after the salmon is cooked, makes cooking easier for those who like the salmon a little crispy. The sauce keeps the fish tender and moist so, crisp it up a little, if you like! 

Pair it with fresh asparagus with a little squeeze of fresh Meyer Lemon juice and Voila!


Ingredients:
1 lb Fillet wild caught salmon
⅛ cup Olive oil
Sea Salt and fresh cracked pepper
2 clementines, washed and sliced as thin as possible. make sure there are no seeds
Sprigs of fresh dill, for garnish

For the Sauce:
½  cup clementine juice preferred but you can use orange juice
½ Everclear Grain Alcohol
2 tbsp brown sugar
2 tbsp soy sauce

Directions:
Set your oven to broil.

  1. Rub the Salmon with olive oil, salt and fresh cracked pepper. Place the salmon skins down in an oven proof pan. Lay the clementine slices over the fish and gently salt and pepper the slices.

  2. In a small saucepan, bring the juice, Everclear Grain Alcohol, brown sugar and soy sauce to a boil. Cook for about 5 minutes or until mixture is reduced by half.

  3. Pour ¾ of the sauce over the fish and clementines.

  4. Broil fish for about 12-15 minutes, or until the fish is done to your liking, Keep an eye on the clementine slices, you may need to flip the slices to prevent them from burning.

  5. Garnish with Sprigs of fresh Dill, pour remaining sauce over the fish before serving.
