Ingredients

  • 1 Cup Homegrown White Onions, minced
  • 2 Each Potatoes, cooked, drained, and roughly mashed
  • 3 Cups Cream
  • Salt & pepper, to taste
  • 1/2 Cup Knudsen Sour cream
  • 1/2 Cup Green Onions, chopped
  • 1/2 Cup Bacon Bits

Instructions

  1. Sauté the onions until they start to pick up some color and turn brown. Add the potatoes and stir to combine. Add the cream and bring the mixture to a boil. Reduce to a simmer. Simmer the soup for 10 minutes until the soup is reduced and thickened. Adjust the seasoning with salt and pepper.
  2. To serve, spoon the soup into a bowl and garnish with sour cream, green onions, and the bacon bits.
