Baked Potato Soup
Ingredients
- 1 Cup Homegrown White Onions, minced
- 2 Each Potatoes, cooked, drained, and roughly mashed
- 3 Cups Cream
- Salt & pepper, to taste
- 1/2 Cup Knudsen Sour cream
- 1/2 Cup Green Onions, chopped
- 1/2 Cup Bacon Bits
Instructions
- Sauté the onions until they start to pick up some color and turn brown. Add the potatoes and stir to combine. Add the cream and bring the mixture to a boil. Reduce to a simmer. Simmer the soup for 10 minutes until the soup is reduced and thickened. Adjust the seasoning with salt and pepper.
- To serve, spoon the soup into a bowl and garnish with sour cream, green onions, and the bacon bits.
