Limes
There are several species of citrus trees whose fruits are called limes, including the Persian lime, Key lime, and kaffir lime. A limes main ripening season is between August and December. However, Mexican limes are often ripen year-round and can be fruiting in late winter and spring.
BUY IT
When picking out your limes, smell them! A ripe lime will smell like a fresh citrus scent. Unripened limes will not have such a strong smell. You can scratch the skin and sniff to test the smell! You can always look for the fresh green colored limes as well. It’s best to stay away from those that are turning to a yellow-ish color. You can also squeeze the lime and make sure its not too firm, and not too soft.
ADD IT
Limes can be added to many things from dessert to your guacamole! Adding a splash of tart lime juice, or a pinch of finely grated zest can help brighten any recipe and help to transform simple dishes. You can juice the lime, you can zest a lime, and you can use lime slices as a garnish.
PREP IT
When using your lime, you should always wash them first. Once they are washed, you can either store them in a cool, dry place or you can slice, zest, and juice the lime.
