Serves: 1 person at 8 oz. portion
Ingredients:
1/2 Lb Halibut
SAUCE:
2/3 cups Onion
2/3 cup Garlic
1 Tbsp Fresh Turmeric
1 cup Rice Wine Vinegar
1 tsp Fish Sauce
1/4 cup Sugar
Salt and pepper to taste
VEGETABLES:
1 Head of Little Gem Lettuce
GARNISH:
1 cup Soy Sauce
1/2 cup Sugar
Sesame Seeds
Instructions:
To make the sauce lightly sauté onions and garlic in a pan.
When garlic and onion are translucent add grated turmeric, rice wine vinegar, fish sauce, and sugar and simmer for 5 minutes.
Adjust to taste with a bit of water, if needed. Remove from heat and set aside.
Lightly grill lettuce in a cast iron pan, then add sauce and bring to a simmer.
Next add Halibut to sauce mixture cover and steam until cooked throughout.
Finish with salt and pepper to taste.
