Long Island, New York native Chef William “Billy” Demarco was introduced to the restaurant industry at an early age through his family-owned business, a popular neighborhood pizzeria. DeMarco loved the fast-paced kitchen environment and the sense of warmth encouraged through spending time with family, eating good food and drinking wine. He brings this sentiment into his position as the executive chef of La Cave Wine and Food Hideaway at Wynn Las Vegas.
DeMarco has been with the celebrated Morton Group restaurant since before La Cave’s opening. His day-to-day responsibilities include maintaining the highest of standards in servicing guests, overseeing the restaurant’s chefs and food preparation, and developing La Cave’s small-plate cuisine. He uses his culinary expertise to craft new dishes with fresh ingredients for the dinner menu, gluten-free fare and Sunday American Brunch. DeMarco serves small plates, oven-fired flatbreads and charcuterie that draw on an array of international influences and reflect his fun, straight-forward approach to cooking.

Entering La Cave Wine and Food Hideaway under the red-lit mantra ‘In Vino Veritas’ feels like walking through the door of the vintner’s tasting room. Created by Michael Morton in 2010, La Cave offers an insider’s feel to the inculcation of the mysteries of wine drinking. The vibe is intimate, sexy and rocking with a natural edginess. La Cave pairs the sophistication of the wine itself with an accessible neighborhood feel, welcoming the connoisseur, the novice, and the guest merely seeking to be entertained.
La Cave’s small-plates menu, designed by Chef Billy DeMarco, offers contemporary American cuisine with an international influence. It is designed to enhance the wine palate, while shining on its own. Some temptations include hand-cut charcuterie, artisanal flatbreads and bacon-wrapped dates.
La Cave features handcrafted wines culled from the very best vineyards from around the world. Our wine list is available by the glass and bottle, in addition to select opportunities for smaller pours.Whether it is a personal exploration of the subtleties of the ancient elixir or reveling with a group of friends, La Cave venerates the human devotion to Dionysus in a 21st Century bacchanal.
