Shaved Apple, Pear, and Avocado Salad with Candied Walnuts
Ingredients
- 1 Each Apple
- 1 Each Pear
- 1 Each Avocado, cut with a spoon
- 1 Each Head of Romaine Hearts
- 2 Cups Spinach, chopped
- 1/2 Cup Walnuts
- 1 Tbsp Truffle Honey
- Olive Oil
- Balsamic Vinegar
- Red Wine Vinegar
- Grape Musto Cotto, La Saba (can purchase at specialty shops)
- Truffle Oil
- Ground Chili
- Salt and Pepper, to taste
Instructions
- Candy the Walnuts in a sauté pan with olive oil, salt, chili pepper, and glaze with the truffle honey. Mix lettuce with olive oil, balsamic, and salt and pepper. Plate the lettuce. Toss the shaved apples and pears into the remaining dressing in the bowl. Portion on top of the lettuce. Spoon cut the avocado on top of each plate and dress with the candied walnuts. Drizzle with red wine vinegar, musto cotto and truffle oil before serving.
