Quick Blackberry Sauce for Poultry or Pork
Ingredients
- 1 Tbs Cooking Oil
- 1/4 Cup Onions, minced
- 1/4 Tbs Rosemary, Thyme, or Sage, dried
- 1/3 Cup Red Wine
- 1/4 Cup Blackberry Seedless Jam
- 1/2 Cup Chicken Broth
- 1 Tbs Red Wine Vinegar
- 2 Tbs Butter, cold
- Salt
- Ground Pepper, to taste
Instructions
- Heat a medium frying pan over medium heat. Cook Onions in the Oil, until translucent, stirring often, about 5 minutes. Add the Wine, Jam, Chicken Broth, and Vinegar, and simmer until the mixture has reduced to a syrup consistency, about 10 minutes. Turn off the heat, and add Butter. Stir the mixture constantly until the Butter has melted. Season to taste with Salt and Ground Pepper.
- Serve with cooked Poultry or Pork.
