Potato, Broccoli, and Bacon Frittata

This Potato, Broccoli, and Bacon Frittata effortlessly combines the earthy goodness of potatoes, the freshness of broccoli, and the rich flavor of bacon, all held together by creamy eggs. This dish is perfect for brunch or a satisfying dinner that's both comforting and delicious.

Ingredients

  • 5 Slices of Bacon, cut into 1/2-inch pieces
  • 2 tbsp Olive Oil
  • 2 Medium Sierra Gold Potatoes, peeled, quartered, and thinly sliced
  • 1/2 cup Onion, chopped
  • Salt
  • Ground Pepper, to taste
  • 1 cup Cooked Broccoli, cut into 1/2-inch pieces
  • 8 Large Eggs
  • 1/2 cup Whole Flat-Leaf Parsley Leaves

Instructions

  1. In a medium (10-inch) nonstick broilerproof skillet, cook the bacon until crispy. Remove it onto a paper towel to drain, and give the skillet a quick wash.
  2. In the same skillet, heat the olive oil over medium heat. Add the sliced potatoes and chopped onion. Season with salt and ground pepper to taste, and toss to combine. Cook this mixture, stirring often, until the potatoes and onion are tender. This usually takes about 10 minutes.
  3. While the potato and onion mixture is cooking, whisk together the eggs, adding salt and pepper to taste, in a medium bowl. Mix in the cooked broccoli.
  4. Preheat your broiler, setting the rack about 5 inches from the heat source.
  5. Pour the egg and broccoli mixture into the skillet with the cooked potatoes and onions. Quickly stir the eggs to distribute everything evenly. Gently shake the pan to settle the mixture.
  6. Turn the heat to low and let the frittata cook until it's almost set in the center. This usually takes around 5 minutes.
  7. Once the frittata is mostly set, place the skillet under the broiler. Broil the frittata until the top is lightly golden and fully set, which usually takes about 3 minutes.
  8. Using a clean spatula, run it around the edges of the frittata to loosen it from the skillet. Carefully slide the frittata out onto a serving plate.
  9. Cut the frittata into wedges and serve it up to enjoy the hearty combination of flavors.
