Ingredients
- 6 Each Large Plums
- 3 Eggs
- 1/2 Cup Honey
- 1/2 of a Vanilla Bean, scraped out
- 1/2 Lb Baker’s Cheese
- Zest and Juice of 1 Lemon
Instructions
- Rinse and half the plums. Remove their pits. Cut each half into four wedges.
- Separate eggs and whip the whites.
- Combine yolks, honey and vanilla in mixer and whip until foamy.
- Add Baker’s cheese, lemon juice and zest and whip until incorporated.
- Carefully fold in the egg whites. Divide the batter into four ovenproof forms.
- Arrange the plum wedges on the batter in a circle resembling the numbers on a clock. Slightly pushing each wedge into the batter so they are halfway covered.
- Bake for about 15 minutes at 375º until browned.
