Pillow Top Strawberries

Create the cake foundation using your favorite cake:
Lemon Pound Cake Instructions
Ted Lasso Cookie Instructions
*Optional Angels Food Cake or Vanilla Wafers


Puff Pastry Cream

Ingredients:
1/2 cup sugar
1/4 cup Arrow root or corn starch
1/8 tsp salt (pinch)
4 large egg yoks
1 tsp pure vanilla extract
2 cups half and Half
2 tablespoons unsalted butter

Directions:
In a medium sauté pan whisk together the sugar, arrow root or corn starch and salt. Whisk until fully incorporated. Whisk together egg yolks, half and half and vanilla extract. Once mixed well add the egg mixture to the sauce pan and whisk into the dry ingredients , immediately add the butter and bring to a low boil over medium heat. Let the mixture boil for up to a minute or until the mixture becomes think. Once thickened strain and cover completely with plastic wrap pressing it directly on the contents of the bowl so a film does not form on the top of the pastry cream. Refrigerate until chilled ( at least 2hours)

Once chilled fold in 1-2 cups of whipped cream.


Cream Cheese Whipped Cream

Ingredients:
1 pkg (8oz) cream cheese
2 tsp Vanilla Paste
1/2 Cup heavy whipping cream
1/3 cup fine bakers sugar

Directions:
Beat cream cheese with Vanilla paste, until fluffy for a lighter mixture add 1 tablespoon heavy whipping cream.

Combine sugar and heavy whipping cream in a separate bowl to form whipping cream. Fold both the cream cheese mixture and the whipping cream together. Until blended.


Strawberries Mixture

Ingredients:
3 cups strawberries
1/4 cup honey or granulated sugar
1tbsp fresh squeezed Meyer lemon juice
For an adult dessert add 1/8 cup St. Germain

Directions:
Depending on the size of your strawberries half or quarter in a bowl. Add the honey or sugar + the lemon juice and let marinate in the refrigerator until ready to use.


Assembly:

Using the base preferred line your container with torn pieces of cake or cookie. Add desired filling on top of the base cake layer then add the strawberry mixture. Repeat until the container is full. Top with Lemon glaze or chocolate glaze.
