Ingredients

  • 12 Each Pork Breakfast Sausages
  • 1 Each Onion
  • 1 Each Green Bell Pepper
  • 1 Each Red Bell Pepper
  • 8 Each Garlic Cloves, sliced
  • 6 Each Tomatoes
  • 1 Each (12 Oz) Can of Tomatoes in Juice
  • 8 Each Eggs
  • Fresh Oregano
  • Tabasco, to taste
  • Salt and Pepper, to taste

Instructions

  1. Rough chop sausage, dice up onions and peppers, and begin to sauté in a large pan. Slice garlic and add to pan after about 3 minutes. Chop up fresh tomatoes; add to sauté pan a minute or two after adding the garlic. About 5 minutes later, add your canned tomatoes, fresh oregano, tabasco, salt and pepper. Cover and let simmer lightly for as little as 20 minutes or as long as 40 minutes. Uncover and crack your eggs on top of the stewed mixture; cover for 3 minutes. Uncover and serve.
