Laura’s Farro Salad
Want a new go-to salad? Here's my household favorite, Farro salad!
Ingredients:
1 1/2 Cups Farro
1 Head of Fennel
1/2 Red Onion
1 Tbsp Olive Oil
Halved Cherry Tomatoes
1/2 Cup Olive Oil
1/2 Cup of Sherry Vinegar
Directions:
1. Boil salted water in a pot
2. Add Farro
3. Cook until Al Dente (6-10 minutes)
4. Strain faro
5. Let it come to room temperature
6. Julienne Fennel
7. slice red onion
8. Add fennel, red onion and 1tbsp of olive oil to pan
9. caramelize over stove top
10. Cool to room temperature
11. Add onion and fennel and halved cherry tomatoes
12. Dress with Olive oil and Vinegar
13. Add salt and pepper to taste
14. Top with fresh basil and parmesan
