Experience the vibrant flavors of the Harvest Vegetable Panini. Grilled zucchini, yellow squash, onion, and Roma tomatoes bring a delightful medley of tastes. The layer of sharp cheddar cheese adds richness to the ensemble. Grilled to perfection between slices of Earthgrain Whole Wheat Bread, this panini is a satisfying and delicious option that captures the essence of the harvest season.

Ingredients

  • 2 tbsp Olive Oil, plus more for brushing onto bread
  • 1 Zucchini, cut lengthwise into 1/4-inch slices
  • 2 Yellow Squash, cut lengthwise into 1/4-inch slices
  • 1 Onion, cut crosswise into 1/4-inch slices
  • 3 Roma Tomatoes, stem removed and cut lengthwise into 1/4-inch slices
  • Salt and Pepper
  • 8 Slices Earthgrain Whole Wheat Bread
  • 4 oz Sharp Cheddar Cheese, sliced

Instructions

  1. In a large bowl, place the sliced Zucchini, Yellow Squash, Onion, and Roma Tomatoes.
  2. Drizzle 1 tbsp Olive Oil over the vegetables and season with Salt and Pepper. Toss to ensure all vegetables are coated in the oil.
  3. Heat a grill or fry pan over medium-high heat. Grill the vegetables in batches for about 3 minutes on each side, or until they become soft. Set the grilled vegetables aside.
  4. Brush one side of each slice of Earthgrain Whole Wheat Bread with Olive Oil. Place the oiled side down on a clean work surface.
  5. For each sandwich, layer different grilled vegetables on one slice of bread and top with slices of Sharp Cheddar Cheese.
  6. Place another slice of bread on top, oiled side up, to complete the sandwich. Repeat for all sandwiches.
  7. Grill each sandwich over medium heat until they turn golden and the cheese melts, approximately 2 minutes per side.
  8. Slice the panini in half and serve immediately.
