Ingredients
- 2 tbsp Olive Oil, plus more for brushing onto bread
- 1 Zucchini, cut lengthwise into 1/4-inch slices
- 2 Yellow Squash, cut lengthwise into 1/4-inch slices
- 1 Onion, cut crosswise into 1/4-inch slices
- 3 Roma Tomatoes, stem removed and cut lengthwise into 1/4-inch slices
- Salt and Pepper
- 8 Slices Earthgrain Whole Wheat Bread
- 4 oz Sharp Cheddar Cheese, sliced
Instructions
- In a large bowl, place the sliced Zucchini, Yellow Squash, Onion, and Roma Tomatoes.
- Drizzle 1 tbsp Olive Oil over the vegetables and season with Salt and Pepper. Toss to ensure all vegetables are coated in the oil.
- Heat a grill or fry pan over medium-high heat. Grill the vegetables in batches for about 3 minutes on each side, or until they become soft. Set the grilled vegetables aside.
- Brush one side of each slice of Earthgrain Whole Wheat Bread with Olive Oil. Place the oiled side down on a clean work surface.
- For each sandwich, layer different grilled vegetables on one slice of bread and top with slices of Sharp Cheddar Cheese.
- Place another slice of bread on top, oiled side up, to complete the sandwich. Repeat for all sandwiches.
- Grill each sandwich over medium heat until they turn golden and the cheese melts, approximately 2 minutes per side.
- Slice the panini in half and serve immediately.
