Filet Mignon with Blueberry Glaze


Ingredients:
HOLY GRAIL STEAK CO. Filet Mignon
1 tbsp Ghee

For the Blueberry Glaze

3/4 cup of Blueberry’s
1/2 cup red wine
1 tbsp dark brown sugar- or honey
2 minced garlic cloves
Fresh rosemary sprigs
Salt and pepper

Instructions:
Using 1 tablespoon Ghee add to a cast iron skillet on high heat - once melted and pan is HOT - add room temperature steak to the skillet for 2 minutes on each side. Make sure the cast iron skillet is HOT ( time it!) then in a pre heated oven of 415 degrees cook another 5-6 minutes or until desired likeness. Chart featured on this recipe!

For Glaze:
Add all the ingredients together - bring to a soft boil. Then once the blueberries are softened mash with a potato masher. Simmer mixture until it reduced by half. Remove and strain through a medium mesh strainer.
