Appetizer Potatoes

Ingredients:
Small Red potatoes 10-15
1/2 cup Corn Beef - Chopped
1/2 Cup Pancetta -Chopped
1 tablespoon melted butter
1 tablespoon heavy cream
1/4 Irish cheddar cheese
Salt and pepper to taste
*Bacon - Chopped (Optional)

Directions:
1. Boil potatoes until fork tender. Once potatoes are cooked, drained and cooled cut them in half and scoop out the inside. You may need to cut a little on the bottom of the potatoes so that it can sit up. You will be using the potato as the container.
2.With the scooped out potato flesh in a bowl add the cheese, corn beef or Pancetta or both. Add the melted butter and cream and mix together until combined. Should look like fluffy mash potatoes. Salt and pepper to taste. Scoop mixture into the potato halves and place them on a baking sheet. You can add additional cheese on top. Place the potatoes in a preheated 400 degree oven for about 10 minutes. Remove from oven and serve.
