Mushrooms

Mushrooms contain two important B vitamins―niacin and riboflavin. Shiitake mushrooms contain lentinan, which may help fight cancer and support the immune system. In general, a half cup of raw mushrooms is about 9 calories, 0.4 grams of fiber, 0.7 grams of protein, 0.1 grams of fat, 1 milligram of sodium, and zero cholesterol.

WHEN PICKING YOUR MUSHROOMS, MAKE SURE THEY ARE FIRM AND HAVE AN OVERALL EVEN COLOR. DO AVOID MUSHROOMS THAT HAVE BEEN DAMAGED AND HAVE SOFT SPOTS OR SMELL LIKE MILDEW. YOU SHOULD ALWAYS HAND SELECT YOUR MUSHROOMS. WHEN COOKING MUSHROOMS WHOLE, ITS BEST TO PICK MUSHROOMS SIMILAR IN SIZE SO THEY WILL COOK EVENLY.

ADD IT

Mushrooms are extremely versatile and can be added to many dishes. Used as a side dish, main dish or even an appetizer. Mushrooms can be used in soups, salads, or pasta to name a few.

PREP IT

Fresh mushrooms should be kept in the refrigerator up to three days. To prep your mushrooms, rinse with cold water and dry. You must use these mushrooms after cleaning or that flesh will start to darken. Trim 1/4" off the stem ends, with shiitake mushrooms the whole stem should be removed.
