  • 1 baguette
  • 3 green onions, finely chopped
  • 5 tablespoons lemon juice
  • 2 cups fresh cherries, pitted and roughly chopped
  • 12 ounces ricotta cheese
  • Olive oil
  • Kosher salt & fresh ground pepper
  • 1 jalapeño, sliced (optional)
  • Basil leaves (optional)

Instructions

  1. In a bowl, combine chopped green onions and cherries. Add a drizzle of olive oil, lemon juice, a pinch of kosher salt and black pepper. Mix everything well and let it sit for a few minutes. If you like a little heat, add some sliced jalapeño to the mix.
  2. Preheat your grill or a cast iron skillet over medium-high heat. Meanwhile, slice the baguette diagonally into 1/2 inch thick pieces. Brush both sides of the bread with olive oil.
  3. Grill the baguette slices cut side down until golden brown and crispy. If you prefer a charred effect, leave the bread on a little longer.
  4. Let the toasts cool a bit, then spread about 1-2 tablespoons of ricotta cheese on each slice. You can add a splash of vanilla extract if you like. Top the ricotta with the cherry salsa.
  5. If you want, scatter some torn basil leaves over the baguette toasts for a pop of color and extra flavor.
  6. Arrange the baguette toasts on a serving platter and enjoy as a light lunch or an appetizer.
