Heirloom Tomato Salad with Sweet Onions, Bocconcini and Balsamic Vinaigrette

  • 4 Each Assorted Heirloom Tomatoes, sliced
  • 1 Each Sweet Onion, sliced (may substitute with Shallots)
  • Marinated Bocconcini*
  • Extra Virgin Olive Oil, to taste
  • Balsamic Vinegar, to taste
  • Salt and Pepper, to taste
  • Basil or Chervil, for garnish
  • 8-10 Each Baby Mozzarella Balls (Bocconcini)
  • Extra Virgin Olive Oil
  • Herbs, chopped (various)

Instructions

  1. Marinate the baby mozzarella in a mixture of herbs and olive oil.
  2. Slice heirloom tomatoes and place in a dish. Season the tomato slices with salt and pepper. Place the sliced sweet onions on top of the tomatoes. Add the marinated bocconcini balls to dish. Drizzle your extra virgin olive oil over the mixture and then drizzle a small amount of balsamic vinegar over the mixture. Add chervil atop salad, for garnish. Serve!
