  • 4 Each Puff Pastry Disks, 5" diameter
  • 3 Each Green Onion Bunches, use white portion (reserve green for salad)
  • 1 Cup Vegetable Broth
  • 1/8 Cup Heavy Cream
  • 1 Cup Crisp Chopped Bacon
  • 1 Tbsp Chervil, fresh
  • 3 Tbsp Red Wine Vinegar
  • Salt and Pepper, to Taste

Instructions

  1. Preheat oven to 350° Slice green onions and combine with stock over low heat, cook until onions are soft, about 15 minutes and drain. When onions have cooled stir in heavy cream and season with salt and pepper. Cut bacon into thick slices and sauté until crisp. Rough chop bacon, cool and add to onion mixture. Pack puff pastry dough with fork to keep it from rising. Spread onion and bacon mixture across the surface and bake for approximately 15-20 minutes until pastry is golden brown. To garnish onion salad, julienne reserved green onion tops, olive oil, red wine vinegar and 3 tablespoons of fresh chervil. Season with salt and pepper. Serve.
