Oatmeal No-Bake Cookies

Ingredients:
1/4 cup Butter or Ghee
1/4 cup Milk
2/3 cup Brown Sugar (can substitute for Monk Fruit)
1/4 cup Flour (Almond or All Purpose)
1 1/2 cup Rolled Oats
1 tsp Vanilla
1/2 + cup Chocolate Chips
Optional: Dried fruits (Rasins or Cranberries)

Directions:

  1. In a saucepan over medium heat, combine the butter, milk, brown sugar, vanilla, flour and a pinch of salt. Stir together and bring to a boil.

  2. Once it comes to a boil stir for an additional minute. Turn off the heat and add oats. Stir until all the ingredients are mixed and combined.

  3. Let sit for aprox. 10 minutes then add chocolate chips. (If adding any dried fruit add them at this time too.)

  4. Scoop mixture onto a lined baking sheet or silpat and let sit for 30-40 min or refrigerate 20 min.
