Pre-heat oven to about 375 degrees. Place cut puff pastry pieces onto a baking sheet lined with parchment or wax paper. Next, toss the sliced apples with the sugar, cinnamon, nutmeg, and lemon juice and set aside. Spread a small amount of almond paste on each piece of puff pastry, use more or less depending on how much you love the flavor of almonds. Sprinkle a small amount of pinenuts on top of the almond paste. Arrange the apples on the puff pastry. Gently brush lightly with the melted butter. Bake for about 15-20 minutes until golden brown.
