Laura’s Homemade Shrub

Ingredients

  • 8 oz of fresh fruit (4oz blackberries & 4oz Strawberries)

  • 8 oz water

  • 8 oz sugar

  • 8 oz red wine

  • 1 sprig of fresh herbs (Thyme)

Method:

  1. On high heat combine Fresh Fruit, water and sugar cook on high heat stirring often until
    the fruit wilts ( apron 5 minutes).

  2. Once sugar is dissolved and fruit looks very wilted cover and let steep for 15 minutes.

  3. After 15min (aprox) strain out all juice. Press on the solids to extract as much juice as possible
    and extract all the flavor.

  4. Return to the sauce pan and add the 8oz of red wine vinegar and the sprig of herbs
    (fresh thyme).

  5. Bring back to a simmer then turn off. Let the mixture cool to room temperature.

  6. Once cool remove the herbs and store until use.

Will last in the refrigerator up to 6 months.
